Dinner Meals

There are two roads to go down for dinner meals at Sub Rosa. We have a series of seasonal theme dinners throughout the year in addition to a rotating set of international dinners. Below you will find a list of the meals built around French, Italian, Indian, Mexican and Pacific Northwest cuisines.

Dîner Français

  • Walla Walla sweet onion tart with balsamic vinegar
  • Gougeres - melt in your mouth gruyère cheese puffs
  • Parisian steak tartare - This is the real thing
  • Warm brie salad - Creamy warm brie mixed with arugula, pancetta and herbed vinaigrette dressing
  • Spinach souffle - Fluffy egg whites add a light touch
  • Braised beef short ribs with oven roasted root vegetables
  • Almond meringue crepes with warm Grand Marnier sauce

    Wine: Sineann Riesling 2006; Brick House - Le Dijonaise 2006; Sineann - Baby Poux Cabernet Sauvignon 2004



    Pranzo Italiano
  • antipasta: Shrimp skewers wrapped with proscuitto
    primi: Pasta with a morel / porcini and brandy cream sauce
  • Asparagus flan
  • Pork tenderloin with mortadella and pancetta
  • Arugula salad with shaved Parmesan Reggiano and pine nuts
  • Boccone dolce - Layered meringue. Tuscany meets Oregon.

    Wine: Owen Roe - Abbots Table 2006; Rex Hill - Maresh Chardonnay 2007; Sineann - Late Harvest Viognier 2003



    Pacific Northwest Dinner
  • Dungeness crab cakes with aioli and roasted red pepper coulis
  • Hazelnut salad. Fresh local greens. Toasted hazelnuts. Oregon currents soaked in Clear Creek bandy topped with Rogue Valley goat cheese.
  • Flame roasted asparagus with browned butter
  • Wild salmon in parchment paper. Served on a bed of sauteed vegetables
  • Blackberry pie. Flaky crust, juicy wild berries with a dollop of hazelnut ice cream

    Wine: Francis Tannahill - Dragonfly Gewurztraminer 2008; Ken Wright - Savoya Pinot Noir 2006; Argyle 2000 Brut - Kir Royale.


    Cena Hispánica
  • Fresh mango salsa, creamy guacamole and homemade tortilla chips
  • Tinga Pie - Flaky crust surrounds this chicken and current meat pie.
  • Greens salad with orange avocado and toasted cumin vieaigrette
  • Poblano chilies stuffed with shredded pork enrobed with a roasted tomato garlic sauce
  • Burnt caramel ice cream

    Wine: Owen Roe Dubrul Riesling 2006; Dunham Syrah 2000; Andrew Rich Late Harvest Gewurztraminer. Hot Chocolate la Oaxaca with a side shot of Ransom Gewürztraminer aquavit.


    Valentine Dinner - Dueling 'His and Her' dinners complete with music for lovers and wine suggestions.

    There is a Middle Eastern / Mediterranean dinner we do but have not posted. We also make a fabulous Indian dinner but once a year we whip up a complete Thanksgiving meal done East Indian. It does not take much of a stretch of spices and ingredients to move the traditional Thanksgiving dinner into true Indian territory, closer to the country that Columbus thought he had found.
