The Sub Rosa Spirits distilling facility is located in Portland, Oregon with the office located in Dundee, the heart of Oregon's wine country. Look for our intense Tarragon and Saffron vodkas or call for an appointment to taste our distillates. The original Sub Rosa is a virtual restaurant. Alas we are only available on-line. It's filled with wit, satire, our own personal wine cellar, outstanding cocktails and some killer recipes using fresh ingredients and locally distilled products. The name 'Sub Rosa' comes from the Latin, literally "under the rose," from the association of the rose with confidentiality. Use of a rose at secret meetings was a symbol of the sworn confidence of the participants.
